Description
TASTING: purple red color with hints of small red fruits and a light spiciness. A wine in which we sought drinkability so that it can be a wine for all meals suitable for Ligurian land cuisine, but also for grilled meats and medium-aged cheeses.
PRODUCTION AREA: the vineyard is located in the “Beusi” area in the municipality of Sanremo and overlooks the ancient village of Bussana Vecchia, at an altitude of about 200 meters and an exposure between the south and south-west. The soils are calcareous-clayey.
CULTIVATION SYSTEMS: the plants are grown in espalier with spurred cordon pruning, all operations are carried out by hand or with the minimum mechanization allowed by the typical Ligurian terraces.
Caratteristiche
VINIFICATION: the hand-picked grapes are taken to the cellar where they rest overnight to be cooled. The following morning they are delicately pressed. Fermentation and maceration take place in steel tanks at a controlled temperature (between 26 and 28 degrees) and are accompanied throughout their duration (about 5-6 days) by pumping over and delestage in order to obtain the most from the skins in terms of color, substance and aromas.
Aging at a controlled temperature until bottling.
