Description
TASTING: A powder pink color with a delicate and elegant scent of cherry blossoms and small red fruits, its marked salinity makes it perfect for dinners with a sea view. Suitable for an aperitif, but can accompany white meats, fish dishes and fried food.
PRODUCTION AREA: the Rossese grapes come from a vineyard in Dolceacqua at about 200 meters above sea level with a western exposure, predominantly clayey-sandy soil rich in skeleton, with little limestone and a pH between sub-alkaline and acid, while the Granaccia grapes come from a vineyard in Bussana di Sanremo at an altitude of about 50 meters, also exposed to the west with calcareous-clayey soil.
CULTIVATION SYSTEMS: the Rossese plants are trained as saplings, while the Granaccia plants are trained as espaliers and pruned with spurred cordons. All operations are carried out by hand or with the minimum mechanization allowed by the typical Ligurian terraces.
Features
VINIFICATION: the hand-picked grapes are taken to the cellar where they rest for a night to be cooled. The following morning they are pressed extremely softly. Maceration is limited only to the time of pressing. The must is cleaned and fermented in steel tanks at a controlled temperature (between 12 and 14 degrees). Refining at a controlled temperature until bottling.
